I've been making churrasco for over 35 years — not as a job, but as a calling. I grew up learning the rituals of Brazilian fire cooking: how to read the heat, how to coax the fat, how to tell the story of a cut of meat.
My favourite part? The conversation. Every time I light the charcoal, I start talking — about the meat, the fire, the technique. I can't help it. And every time, someone leans in to learn.
I moved with my family to a beautiful place called Cascais, a municipality in the Lisbon District — and I brought the whole tradition with me. My knives have my name engraved on them. My leather apron has seen thousands of sessions. The charcoal is always real.
